Portobello Mushroom Burger
Portobello mushrooms are a fantastic plant-based alternative to meat commonly used in cheeseburgers. Without any fat or cholesterol, and loads of vital nutrients, they’re a great way to increase the nutrition of every burger you eat, and they’ll help you stay on your fitness track, making this one of the best healthy National Cheeseburger Day recipes.
You’ll need ¼ cup each of balsamic vinegar and olive oil, 4 minced garlic cloves, pepper and salt, a red bell pepper that’s been cut into four pieces, and 8 Portobello mushrooms.
To make these burgers, whisk vinegar, oil, salt, pepper, and garlic together before adding in mushrooms and bell pepper. Make sure everything is coated and let it marinate for a half hour or overnight.
Grill the bell pepper until blackened for roughly 10 minutes. Remove from grill and discard the skin when it’s cool enough to do so.
Next, grill the dome side first of the mushrooms until lightly charred. Flip to grill the other side in the same manner. It will take about 3-4 minutes on each side.
Put the mushroom and bell pepper on a bun with some plant-based cheese, such as from Chao or Daiya, add some spinach, and enjoy.
Lentil Mushroom Cheeseburger
Mushrooms come to the rescue again, this time combined with yummy lentils that are full of protein and fiber.
Start by bringing 1 cup of lentils, 2¼ cups of water, a garlic clove, ¼ cup of onions, and 1 teaspoon of dried parley to a boil before letting it simmer on reduced heat for 35 minutes.
In the meantime, combine ¾ cup chopped walnuts, ½ cup ground flaxseed, and 2 cups of breadcrumbs. Add in 2 tablespoons of nutritional yeast, 1 teaspoon of salt, ½ teaspoon black pepper, and ½ teaspoon paprika.
Sauté 3 cups of mushrooms, 1½ cups of kale, 2 garlic cloves, and 1 cup of onion. After taking the lentils off the heat, add 2 tablespoons Dijon mustard and 3 tablespoons of balsamic vinegar. Mash it all together and combine with the other ingredients.
After refrigerating the mix for 30 minutes, fry patties for a couple minutes on each side, place on a bun, add plant-based cheese, and enjoy.
